Pepián – Hearty Guatemalan Stew

A rich, flavorful stew made with roasted spices, tomatoes, and either chicken, beef, or pork. Guatemala's National Dish...A staple for family gatherings!

Ingredients:

  • 2 lbs chicken or beef, cut into pieces
  • 4 roma tomatoes, roasted
  • 1 onion, roasted
  • 2 garlic cloves, roasted
  • 2 dried guajillo chiles, seeded and softened in hot water
  • ¼ cup pepitas (pumpkin seeds)
  • ¼ cup sesame seeds
  • 1 tsp ground cumin
  • 1 tsp ground achiote
  • 3 cups chicken broth
  • 2 potatoes, cubed
  • 2 carrots, sliced
  • ½ cup green beans
  • Salt and pepper to taste

Instructions:

  1. In a dry pan, toast the pepitas and sesame seeds until fragrant, then grind them into a fine powder.
  2. Blend the roasted tomatoes, onion, garlic, softened chiles, and ground seeds with a bit of broth until smooth.
  3. In a large Cusina Maya cazo or stockpot, brown the chicken or beef, then pour in the sauce.
  4. Add the broth, potatoes, carrots, and green beans. Simmer for 30-40 minutes until thickened.
  5. Season with salt and pepper to taste and serve with fresh tortillas.
