A rich, flavorful stew made with roasted spices, tomatoes, and either chicken, beef, or pork. Guatemala's National Dish...A staple for family gatherings!
Ingredients:
- 2 lbs chicken or beef, cut into pieces
- 4 roma tomatoes, roasted
- 1 onion, roasted
- 2 garlic cloves, roasted
- 2 dried guajillo chiles, seeded and softened in hot water
- ¼ cup pepitas (pumpkin seeds)
- ¼ cup sesame seeds
- 1 tsp ground cumin
- 1 tsp ground achiote
- 3 cups chicken broth
- 2 potatoes, cubed
- 2 carrots, sliced
- ½ cup green beans
- Salt and pepper to taste
Instructions:
- In a dry pan, toast the pepitas and sesame seeds until fragrant, then grind them into a fine powder.
- Blend the roasted tomatoes, onion, garlic, softened chiles, and ground seeds with a bit of broth until smooth.
- In a large Cusina Maya cazo or stockpot, brown the chicken or beef, then pour in the sauce.
- Add the broth, potatoes, carrots, and green beans. Simmer for 30-40 minutes until thickened.
- Season with salt and pepper to taste and serve with fresh tortillas.
