Ingredients:
- 2 tablespoons butter
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 cups mixed vegetables (broccoli, bell peppers, cherry tomatoes)
- 8 oz pasta
- 2 cups vegetable broth
- 1 cup milk
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions:
- In a Cusina Maya stock pot, melt the butter over medium heat.
- Add the onion and garlic, and sauté until fragrant.
- Add the mixed vegetables and cook for 5 minutes.
- Stir in the pasta, vegetable broth, and milk. Bring to a boil, then reduce the heat and simmer for 10-12 minutes or until the pasta is al dente.
- Stir in the Parmesan cheese and season with salt and pepper.
- Serve hot, garnished with extra Parmesan if desired.
