Caldo de Res – Guatemalan Beef Soup

A comforting, nourishing soup loaded with vegetables and slow-cooked beef.

Ingredients:

  • 2 lbs beef shank
  • 1 onion, quartered
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • ½ head cabbage, chopped
  • 2 corn cobs, cut into thirds
  • 3 Roma tomatoes, blended into a sauce
  • 1 tsp ground cumin
  • ½ tsp black pepper
  • Salt to taste
  • 8 cups water

Instructions:

  1. In a large Cusina Maya stockpot, bring the beef, water, onion, and salt to a boil. Simmer for 1.5 hours.
  2. Add the blended tomato sauce, cumin, and pepper. Simmer for another 20 minutes.
  3. Toss in the carrots, potatoes, cabbage, and corn, cooking until tender.
  4. Serve hot with fresh tortillas and lime wedges!
