A comforting, nourishing soup loaded with vegetables and slow-cooked beef.
Ingredients:
- 2 lbs beef shank
- 1 onion, quartered
- 2 carrots, sliced
- 2 potatoes, cubed
- ½ head cabbage, chopped
- 2 corn cobs, cut into thirds
- 3 Roma tomatoes, blended into a sauce
- 1 tsp ground cumin
- ½ tsp black pepper
- Salt to taste
- 8 cups water
Instructions:
- In a large Cusina Maya stockpot, bring the beef, water, onion, and salt to a boil. Simmer for 1.5 hours.
- Add the blended tomato sauce, cumin, and pepper. Simmer for another 20 minutes.
- Toss in the carrots, potatoes, cabbage, and corn, cooking until tender.
- Serve hot with fresh tortillas and lime wedges!
